Meal Plan - Day 3 - Wednesday

I allow myself as much tea and or coffee as I want during the day and something that has helped is diet coke, it throws the body of track for a while.

If you decide to pick at foods..avoid anything that has over 3g of sugar in it per portion.

Roasted Red Pepper & Cous Cous

A tasty dish that will have around 600-700 calories per portion, fill your plate and enjoy


Prep Time 15 Minutes - Cook time 45 minutes

Ingredients to feed 2 People

400g beef mince
bolognese sauce
2 x red pepper
8 x mushrooms
10 cherry tomatoes
Packet of flavored cous cous

Cooking Directions

This is quite straight forward, i precook the mince as i will cook the kids spaghetti bolognese before hand.

Tip: Once the mince is cooked and before you add the sauce empty the mince into a colander with a bowl underneath and strain of any excess fat, you'll be amazed at how much is in there.

Re add the mince to the saucepan and add the sauce. Grab your chopping board and chop the top of off a red bell pepper and bore out the insides, once the mince has cooled slightly as it will have done if it were served for the kids and hour or so before, spoon in the mince and put the top back on and preheat the oven to 19 degrees

grab a casserole dish and add in mushrooms & cherry tomatoes and remember to slice the tops off, grab this pot together with the red peppers once place in the oven for around 20 minutes.

Cook couscous as directed on the packet which will take no longer than 5 minutes. Server up and take the top off the red peeper and enjoy.

**You might want to substitute the bolognese sauce for the rogan josh sauce.**
